It's chicken kelaguin("cooked" in lemon juice, yes!!),
Tabasco on everything,
finadene if you want something hot(because Tabasco isn't),
tuba (coconut moonshine) and betel nut when you get hammered(that's why the sidewalks are red, the spit from the nuts stains),
and throw rocks at people when you fight (this might be related to the aforementioned tuba);
but the SPAM and red rice are spot on. Not bad.
The whole roasted pigs and week long parties when someone dies are awesome.
Fanihi is one of the only things that actually grossed me out there.
They don't clean those, they just stew 'em whole in coconut milk, with dozens of chilis and chopped onions etc.

Even with the stains and the chewed husks everywhere, betel nut still has less disgusting detritus than fucking chewing tobacco. At least until some asshole tears open a cigarette and stuffs the tobacco in on with the nut and the lime.

(makes a little over 1.5 qts)
3 cups soy sauce
2 cups white vinegar
1 cup lemon juice
1 large yellow onion, diced
4 cloves garlic, chopped fine
2-3 stalks of green onion, sliced on bias. Use almost the whole thing.
Hot chilis to taste, finely chopped; in Guam this means LOTS.
Put it all in a bowl, mix well, and chill.
Reserve some to use as a condiment.
Use as a grilling marinade for chicken or ribs.
Note on the chilis, these are traditional:
Thai peppers make a decent substitute.
I'd use habaneros in a pinch.
