    Shrug

as far as ive been able to observe the methodolgy is not to far from older forms of muay thai...when intercepting agressive punches or kicks to block with more focus on the elbow or knee to make the strikes physicaly costly on the attacker executed the right way there should be plum sized bruises dotting whatever area your opponent tried to strike with....additionaly almost any move you perform with power and purpose will land and cause some damage...even if its most like to just stun your opponent...you can follow with a more traditional attack...or escape...the problem i believe with most wing tsun exhibitions is that wingtsun isnt an exhibition art...at its core its a down and dirty soft target self defense system for use against thugs and muggers and generally unskilled assailants

Do you mean that Chun is useful unless the assailant knows at all, what they're doing?

They do not need no help? I assume that you mean that they need some, or in many cases, a lot, of help. If my assumption is correct, I completely agree with you.
