You're not going to learn anything over night. EVER. You're never going to learn anything without training over and over again. You're not going to be able to defend yourself under any system if you don't know how to properly pinch kick and grapple.
Provided you can punch kick and grapple ie have trained MMA, and want to turn it into a "street fighting art", I suggest this:
Mind you, if you don't know how to perform the basics (for real and in sparring), it won't help you at all

However, if it's used for a reason other than protecting the neck when the head is jarred, I may be mistaken. Plenty of people teach head and spine manipulations after an arm drag or something in order to take down someone with a knife. Maybe its used for practicing that kind of stuff (but I kinda doubt a cervical collar would protect against twisting force to the neck). In my mind, that's the kind of stuff that you just have to lower the intensity to make it safe, not use gear.

We do fang chokes and punyos to the neck after the takedown. We don't wear collars and don't have any problems. As long as you control yourself and respect the tap, you are not going to hurt anyone. The problem, IMHO, would be if you had a bunch of noobs trying to figure out stick/knife fighting and going overboard.
And I wear a hockey helmet with cage on it. It does me pretty well, but is freaking loud when you get a shot to the head. But to me that's good.

Which set did you go for? I saw them both and self offence was good though try are slightly different ad if you have the $ then go both
