The more older one is the better this answer will be. Old instructors(and old golfers) are still going at it because of being active and "keeping correct posture through their techniques and forms." I'm not old but when I take time off from training my posture goes to ****.
Posture in fighting is something that I am undecided about, being that one can't always fight with a straight back and my most powerful attacks aren't in correct posture.

It's a question of form really, good posture in general leads to good form. If your oponent can break your form he has accomplished his objective, that's essentially what you're trying to do when you fight, manipulate your oponents form. If you can learn how to maintain your form when fighting you'll be well off. And good posture in general will cause less back problems with old age as blue-dragon pointed out

ok, i'm an oldish instructor (well 46) and teaching for 30 of those years.
when I used to walk gods dog, he told me posture was everything.
Its true. slouch or lean with your shoulders and your gonna get thrown if you throw a punch.
also feel as though you are being pulled by the belt. you'll stop bouncing up and down through your steps, your hips will turn quicker for kicking and you will be able to avoid heavy contact when punched, by riding the punch or deflecting the punch.
more importantly, eventually you wont need those low karate stances, as you will feel stability with balance and through movement, no over-balancing.
this will also allow greater hip rotation for punching. the elbows wont drift out and tension wont come into the shoulders.
I can still kick to the head front side or roundhouse, so I guess i'm doin somethin right.
