Style: Parkour and Judo--
Welcome to Bullshido Teffera.
I was in China about four years ago for a few weeks. I was in the back woods, in Yunnan and Guizhou. I didn't have time to check out any schools, but there were very few in the cities I was in. Again, this was the backwoods of China (still tons of people) and the poverty level is higher than, say, Beijing.
I did get to see some guys who claimed to be from the Shaolin temple do a demo. Mostly what they did was parlour tricks. They were performers, not fighters. If I can find the vids I'll try to post them.
I would say if you're interested in learning to fight, traditional CMA might not be the way to go. If you haven't studied CMA, I would suggest not travelling to China for this purpose as your introduction into the art, especially if you don't have the language. It's simply an enormous leap into something you have no experience in. However, it is surprisingly easy to find fluent English speakers in China. If you're more looking for the spiritual side, I cannot comment on that, except to say that many people in China prey on people looking for this. If you're looking to learn it as an art form, I might suggest you gain some proficiency first, but as you said there isn't much availability to you, I have no good suggestions for that.
If you're looking to gain fighting skills, there are better, shorter, cheaper, safer, wiser roads.

Hot pot seemed pretty simple. They just boiled some water and put the stuff in. I can't tell you what spices were used, though.
What I can't find (and it angers me) are those bun things. I don't even know what they were called. Nobody in the States seems to make teh r3al Chinese food. We should protest.
