"Pain compliance" stuff is considered a dick move because it's generally ineffective. Things like jaw crushing when peopel tuck their chin to an RNC is normal and acceptable sometimes, but you should PREFER to transition to a different attack. If you're jaw crushing you're probably using too much energy anyways.
Other "dick" moves are Knee of Face, clipping the side of the head with your elbow while putting on an americana, intentionally attacking bandaged limbs/joints, chin in eye socket, cup in sternum or spine, finger grabbing.

I've seen rules against grabbing the clavicle. Is it something worth banning? Is it something worth doing if it were allowed?

If the lower skilled combatant does this, the rest of the altercation will very likely be much worse than if they'd never resorted to "dirty fightin'".
During normal sparring, grabbing behind the clavicle is wholly inappropriate.Shut the hell up and train.

To be more direct this is being a dick:
In class we were doing free rolling, I went to put my knee on the other guys calf because I know this causes pain and it was stopping him pulling guard.
1) It is just painful and won't stop anything if your opponent is skilled.
2) Why are you trying to stop him from pulling guard? You should be learning how to pass.
In general stopping someone from going to a normal position in the very beginning of a roll is a dick move. You are both trying to learn and most of the time people are just trying to fall into a starting position. In tournament or drilling sure try to stop someone from getting guard but in practice learn to pass.

I'd like to see us build a "Comprehensive List of Dick Moves", for the benefit of future generations...
