You certainly can't go wrong with Shah Franco is one of the best Shotokan and Bjj teacher in Toronto.

You should also check bodyof4bjj its under Professor Costa and he also teach muay thai its in north york though.

Torontobjj is also very good but sometimes it can be very crowded in class

I'm sure you meant well, but the above info on me isn't very accurate :)
I've actually never had an ammy MT fight, and have been training in a military version of submission grappling for over 20 years. I've had 4 MMA fights, smokers, but with pro gear and rules.
Maybe thinking of someone else? :)
