Can any youtube nerds put this vid into context? What was supposed to be going on there? Was the plain clothed guy some random untrained audience member like I assume he is? Or is there more to the story?

I'd assume, judging by the fact that he knew where to put his hands when they first matched up for chi-sau, and by the way he used the _ing _un guard after the first exchange, that he's had some training.

Wish I spoke Cantonese though, because I assume Leung Ting had to do some impressive double-talk at the end so he wouldn't get laughed off the stage.

Don't know the full story. (Should have paid more attention to the Cantonese when I was in HK) but I don't think the plain clothes guy was some random untrained dude. He was obviously a chunner and got the better of what I am guessing is one of Ting's higher ranked students.
