I'm not sure that I get what you're saying, but the point is that he's not contributing anything to the "world" (so to speak) that's worth $75,000. I'm not sure one 10-minute grappling match is really worth anything at all, except for the fact that it would be a huge attraction. Still not $75,000.
Pro athletes, in general, get paid too much to play a game. -

Meh, elite people in their field will try to negotiate for as much as they can, particularly if their job is one that puts them in harm's way. It's worth it if there's enough fans and sponsors willing to pay to see it (and this is coming from someone who's not a sportsfan). If people are willing to buy millions of albums from a musician, even if they're not "contributing anything to the world", then they earned the money. The world is more than just structures and things you can see.

Gracie is not in the same situation as a laborer building houses for $8 an hour.
There just aren't enough people who care enough to pay or advertise to make this event commercially profitable if there's a $75,000 price tag.
I don't see 5,000 people paying $20 or so each for this.
