But that's really more atemi waza than Dim Mak.
Atemi waza is just striking at weak points of the body that can incapacitate long enough to apply a lock or deliver a good solid strike (or just hurt like hell). That stuff works - I have similar experiences of my legs deciding to stop working and crumple for no apparent good reason after a well focused moderate strike or pressure.
Dim Mak implies meridian disruption, organ failure, delayed death, etc. Kind of similar, but Dim Mak has that eerie mystical aura around it that just draws psychos and con men (not to mention the lemmings that will pay any price to learn the magic) -

As with most myths there is often a base of truth. This type of "vital point" striking is probably the source of the myths involved with Dim Mak. Striking different nerves in the body can have real and damaging effects but I doubt they are as extreme as the infamous delayed death touch or anything.
