i think swimming competitively helps with just about damn near any athletic endeavor.

it sucks that most people either don't have access to year round swimming, or don't use it as part of their conditioning.

I am happy to report that tonight I while at BJJ I really focuses on exhaling and my god what a difference it made. At no point did I find myself really gasping for air and I had rolled with a few of the larger folks tonight and we worked on chokes. I am rather happy with the results. Thank you all for helping me.

Is their some highly effective diaphragm or core work out that would greatly help with this?
id just work your core a lot, try to pack some muscle on (not too much to where it makes you ineffective) and try not to be flat-backed

Besides controlling your breathing and not panicking, don't let them flatten you out. It really doesn't take much space to give you breathing room, just a wiggle to the side can sometimes give you enough.

That being said, I have almost tapped from someone's gut smothering my face.

when working with new people sometimes the more experienced folks will do this to you on purpose, i know this really happens in judo, rather than go for a sub. they are helping you by showing you how a strong base should feel and you are helping them practice their position / control.

i'm tall and skinny and i used to have an instructor that was 5'9ish in the 230 range and pretty damn strong. he would crush me in kesa gatame, while i flailed about, until he could feel i was about to tap (fatigue / why bother) then he would ease up enough to let me escape. eventually, i learned to move before he would get full control...usually.

and your body learns and adapts as you progress like everyone else said.
