On the first one, isn't there a concern about uke rolling his toes underneath him and exploding his own knee as he goes down?

I think this is being distorted a bit by uke stepping off the uchimata in an unrealistic manner. (Or at least he gets into a position where you wouldn't want to finish the way tori does)
Typically you wouldn't plant your foot back in a well spread karate stance like that after hopping off the uchimata. You'll land (or be on your way to landing) onto one foot in a fairly precarious position where a kosoto or dai-ashi can clip you down fairly handy.
If uke did land in that karate stance, I'd probably attack the other foot, or maybe look to take them on another forward throw out to the side. -
