I train regularly with Nick Caggia, who usually weighs between 330 and 370, and has several submission victories over black belts in competition.
I'm not trying to brag; just noting that all of the following advice is from rolling with him.
1) Get on top. You don't want that kind of weight on top of you. Learn to wrestle, *****.
2) If you can't take him down, work half guard. I'm 6'4" with long legs, and I still can't effectively manage guard on him - I can't effectively lock my legs for closed guard, and I can't keep him from pressing me down flat in open guard. Half guard gives you some control over his weight while letting you escape your hips to the side so his weight isn't directly on you. Work your sweeps and back taking.
3) Stay in side mount when possible. I'm the tallest person in my gym, and in mount on Nick I only barely get my knees to touch the ground. It's inherently easier for him to reverse from there. Take mount to get the points and stay ready to bail out of it at any time. Spend most of your time in side, where you can better inhibit his movement.

I occasionally roll with a blue belt outside of my gym that does not have the best technique in the world, but is incredibly short and round. I DON'T have the longest legs in the world, and the second I get mounted on this guy, he will roll me off. It's like trying to hold mount on a goddamned balloon. Stay on top: I consider myself to have pretty solid sweeps from guard and sweeping massive tall/heavy fellows is FUCKING HARD. Like better folks have said, keep your hips free, whether this means butterfly guard, half-guard or out wrestling them to be on top is up to you.
Have good cardio/muscular endurance: You will probably need alot of strength to move them around, even breathe, when these guys are on top of you, even if your technique is good. Keep in mind they also have alot to move around, TRY to use this to your advantage (this has proven harder than I ever thought). If you gas with a 300+ guy (god forbid he's mostly muscle) on top, you will be in a world of pain.
