First, the "believers" don't understand the use of the word "theory" in relation to science in the first place... They think "theory" means "hypothesis," rather than "linking together this mountain of fucking evidence we've gathered from multiple disciplines over the last several hundred years."
Second, the huge difference is that science is willing to admit it's wrong... That's the whole point! To understand a thing in light of new evidence is what allows science to continue to grow and to better understand the world around us. Religion says "this is it, this is the truth, look no further," which is why Dawkins, et al, point out how religion stagnates understanding.
Just to clarify, aren't you saying the exact same thing I did, except doing a better job of it?
