The best move from the back mount is to play with their nipples, maybe pinching, some twirling.
And don't forget to get wood, everyone just loves the feel of hard man meat up against their back.

Hopefully my shitacular description makes sense to somebody. It does take some strength to pull their arm down and some flexibility to get your look unhooked and up over their arm but nothing extraordinary.

I saw this in the UFC once. I think it was Cote vs. Doerksen.

Here is a little move I've been able to pull off with relative success as of late when I've had the rare opportunity to really get stuck on someones back. This is good especially for those guys with damn good neck defense when they are back mounted.

Why struggle against two arms when you can make it two on one. I get an arm under their armpit and put my wrist on their forearm. Usually they squeeze that arm to keep my arm trapped under. I drag their arm down to their side and then move my leg on that side up and over their arm pinning it to their side. Sometimes I use my other arm ( the one not holding on to their forearm ) to help pull my leg up by grabbing onto my ankle/foot. Once I have trapped their arm pretty securely I release my grip on the trapped arm and now I have two arms against their one to sink in the choke with.

If only I had developed the move myself I could give it a sweet name. The only reason I was taught the move is because I asked. My instructor has damn good defense when someone is on his back (others words, not only my inexperienced observation) so when I couldn't get close to anything on him from there I asked him after time was up on the roll and he said that he can usually hold out except when people pull the move I described. Which just goes to show you that your instructor isn't going to teach you every damn move or little trick he knows, no time. Whenever anyone new comes along to roll I always look for questions to ask that might glean some useful unknown to me technique from them. Then write the **** down after class.

If the guy is in turtle position I always try for a low percentage but very cool looking Jikoku Jime. Ideally you want them to be floundering around like a fish out of water with useless extended arms, at this point twist yourself into what would be considered a "side control, only on his back" hook your right leg under his right arm and grab under his left armpit with your left arm, then dive over him to his left side, hooking your right leg up to lift him and roll him over. At this point you should have him in what is similar to an iron cross, you then snakeyour left leg over his arm, taking the place of your right leg in controlling the limb, snake the right over his head, grab his far lapel with your right hand and pull with arm while you push with leg.
This will probably only work on someone who is dazed, confused, on drugs, unconcious, reaching for loose change dropped on the mat (it may help you to scatter some around prior to the match, nothing under a dime though, some people are "too good" to go for a nickel, unless they're university students, where pennies or laundry tokens will work just as well).

Of the aforementioned collar chokes, one of my favorites, particularly against people who are stronger, is to get a cross lapel grip (say, with your right hand on their left lapel, from the back) and then grab their left leg with your left hand. with that control, then take your right hook and put it over their shoulder. Now you can use the strength of your leg and back against their chin, and at the very least annoy them into doing something.

Also, when you are on their back, remember to inflate your chest, like you're giving them a big, sexy hug. Don't tell them that though.

lapel chokes and throw in some chicken wings, they can help loosen up choke defense and cinch down on chokes

and in judo it's often stressed to pull up for the collar choke and not necessarily straight back, so keep that in mind

Yes, also called crucifix (in fact I think its called crucifix more often that what I said...). Hehe, just doing my part to think outside the cube.
