deepblue, if you're the instructor then YES it's your job to deal with the blubbering and if you think this is a waste of your time, then quit teaching a class and select one or two "right-on" students only to gain mastery from you. If you're not the instructor, ignore the rant and take the problem to the instructor, no you shouldn't be the one to deal with this.
As for some of the rest - gender is not the issue, it's whether you're able to deal with people who don't quite get the idea that ma = pain.
If you're more experienced, at least think before you lash out like a newbie. Increasing your own control in a stressful situation is also useful and it sounds liek a lot of you are getting stressed by this one.

I would ask them to leave the studio and come back when they regain their composure and are mentally focused on the training. Frustrated crying people are dangerous to themselves and everyone else in the class. Tell them to come back when they are ready to train properly.

You make a very important point. I think most (not all) the problems is the lack of communication or misinterpretation. Just ask them if the level you are going at is 'Okay' with them and wether you should do it faster or harder with them. And likewise if your partner is not at the speed you want them to go at you just simply tell them to go faster/harder with you when its your turn to be on the receiving end.
[When I was taking wado ryu karate in the 80's I use to often partner up with this girl and she would communicate to me if I was blocking too hard on her etc. and vis verse. At least we had good communication and understood what we wanted from each other. Problem Solved.:) ]
*You just have to keep in mind that not everyone is going to be at the same level of training as you are. Just communicate what you expect from each other.;)
