I'd have to say the roof top fight scene from Jackie Chan's "Who Am I". It was cool to see Jackie fight fight against a TKD guy and a Kung Fu guy and how his adversaries had a game going on how fast they could beat Jackie.

the final seen between Jet Li and the bad guy in the hay barn i think in Once Upon A Time in China. They are fighting on ladders and falling into oneanother whilst kicking the rungs out from the other guys. Its completely mad and I think they did a pale copy for the recent Muskateer film. That one is great though.
"After the rain", the movie by Akira Korassawa successor, I guess it has another name in English.
Anyhow, this movie has great almost authentic Japanese swordsmanship, this is true in General regarding Korasawaa, I lately read that he took two Koryu headmasters as his technical advisers for this aim.

It is kind of weird talking about cool movie fight scenes and forgetting about all those exciting grappling scenes in movies.
